Thanksgiving - Or I should say Friendsgiving

I haven't spent Thanksgiving with family in years, and honestly I don't miss it. It was always too stressful and they never let me cook or help. I started having Thanksgiving, or "Friendsgiving" with friends and their families and it is wonderful. We all make something and help each other out and there are some favorites each year, but always new things to try. 

I was only sad this year that C had to miss it because he had to work. He actually has to miss every holiday this year except he got Christmas eve off which is great.

We are doing a repeat Friendsgiving with some other friends tomorrow and I am excited because C can actually be there. He is making his amazing Pumpkin Cheesecake. Also, due to a mistake on our friend's part we wont be smoking a Turkey like we planned and we are making ham instead. 

The dish I made was Creamy Fried Confetti Corn. I made it in my cast iron skillet and it was so delicious. I am making it again tomorrow and I think it will be a new favorite. I mean, it has bacon in it and who doesn't love bacon?

Creamy Fried Confetti Corn




Ingredients:

  • 8 bacon slices
  • 4 cups fresh sweet corn kernels (I used frozen kernels that I thawed)
  • medium-size white onion, finely chopped 
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper 
  • 8oz package cream cheese, softened and cubed (I set out next to the skillet when I began the dish)
  • 1/2 cup half-and-half
  • 1 teaspoon sugar
  • 1 teaspoon salt 
  • 1 teaspoon pepper
Preparation:

1. Cook the bacon in a large skillet until crisp; remove bacon, and drain on paper towels, reserving 2 tablespoons of the drippings in the skillet. Chop the bacon up and set aside.*

2. Sauté the corn, onion, and bell peppers in the hot drippings over medium-high about 6 minutes or until tender. 

3. Stir in the sugar, salt, and pepper.

4. Add the cream cheese and half-and-half, stirring until cream cheese melts.  

5. Spoon into a serving dish and top with the bacon.

*I cooked a few more pieces of bacon because I wanted a little more bacon and I also wanted to snack on bacon. Who wouldn't want a bacon snack, especially an 18 week pregnant woman? Do not start with me on nitrates.
